Prize Winning Recipe

Here is one of the prize winning recipes from our October Chili Cook-Off. It is easy to prepare and tastes delicious.

Scrumptious White Chili

1 1/2 Tbsp Oil

1 large onion, chopped

2 Cloves garlic, minced

2 cups chopped cooked chicken

4 oz. can chopped mild green chilies

1/2 - Tbsp dice jalapeño pepper (optional)

1 1/2 tsp ground cumin

1 tsp dried oregano

10.5 oz can condensed chicken broth

1 broth can of water

15 oz can Great Northern Beans

1/2 tsp cayenne pepper or to taste

Salt to taste

6 oz shredded Monterey Jack Cheese

1/2 cup low fat sour cream

Chopped green onions (optional)

1. In a large stock pot, sauté onion and garlic in oil over

medium heat.

2. Add chicken, chilies (jalapeno peppers) cumin, oregano, chicken broth, water and beans to stockpot. Stir well, bring to a boil. Reduce heat and simmer, covered for 10-15 minutes.

3. Just before serving, add the cayenne pepper, salt, cheese and sour cream. Heat just until cheese is melted, being careful not to let the chili boil.

4. Serve at once, garnish with the green onions if desired.
